The hallmark of Kakhetian winemaking is the qvevri — large clay vessels buried underground for fermentation and storage. This 8,000-year-old technique is recognized by UNESCO as Intangible Cultural Heritage. Wine aged in qvevri with skins and seeds is called "amber" or "orange" wine — a golden-hued drink with a rich, tannic profile unlike anything else in the world.
